Notes are found on the Student Hub page and can include any type of information or observation that you want to capture about a student for your own purpose or to share with others. Default access to the note is given to anyone with permission to see that student's information, e.g. someone on the student's team. Access can also be limited to only those with the ability to see sensitive information or it can be completely private, e.g. only the person who created the Note can see it.
Another option around Notes is to push notification of them. The default is that everyone on the student's team is notified. Notification can also be restricted to only those who can see sensitive info about a student, only a specific individual (or individuals) can receive an email about the Note, or there can be no notification sent.
